Garden to Kitchen: This Week's Harvest
At Weston, our Estate to Plate ethos is all about celebrating the very best seasonal produce, grown with care in our four-acre Walled Garden and transformed into delicious dishes by our award-winning chefs.
Located just a two-minute walk from The Granary Restaurant kitchen, the Walled Garden supplies a constantly changing harvest of fruit, vegetables and herbs throughout the growing season. Every week, our gardeners carefully pick the freshest produce at its peak and deliver it straight to the kitchen, ensuring our chefs can create dishes bursting with flavour.
This week the garden produced an impressive variety of seasonal crops, including 10.2kg of tomatoes, 7.21kg of mixed squash, 6.3kg of pink carrots, 4.22kg of raspberries, 3.8kg of cucumbers, 3.5kg of chard, 3kg of curly kale, 2.3kg of red cabbage, 1.6kg of leeks, 0.3kg of herbs and 0.2kg of radishes.
In total, an incredible 205.41kg of fresh produce was harvested from the Walled Garden during August, providing a wealth of ingredients for our chefs to showcase across seasonal menus.

One of the most rewarding parts of our work is seeing such a wide variety of produce harvested at its peak and sent straight to the kitchen. It perfectly demonstrates the connection between the garden and the plate, and the value of growing produce as locally and sustainably as possible.”
From vibrant vegetables and fragrant herbs to homegrown berries and seasonal fruits, our harvest continues to be at the heart of the Weston dining experience.
