Garden to Kitchen: This Week's Harvest

At Weston, our Estate to Plate ethos is all about celebrating the very best seasonal produce, grown with care in our four-acre Walled Garden and transformed into delicious dishes by our award-winning chefs.

Located just a two-minute walk from The Granary Restaurant kitchen, the Walled Garden supplies a constantly changing harvest of fruit, vegetables and herbs throughout the growing season. Every week, our gardeners carefully pick the freshest produce at its peak and deliver it straight to the kitchen, ensuring our chefs can create dishes bursting with flavour.

For the week commencing 27th July, the harvest included 35kg of apples, 11.2kg of cucumbers3kg of chard2kg of cabbage, and 0.35kg of aromatic herbs.

The fruit harvest continues to thrive, with 8.8kg of mulberries, 4kg of raspberries and 1kg of delicate white strawberries picked from the garden. These seasonal fruits make their way straight to the kitchen, inspiring desserts, preserves and specials that showcase the flavours of summer.

The abundance of fresh produce from the Walled Garden continues to inspire our chefs, allowing them to make the most of what’s growing on the estate and create menus that truly reflect the seasons.

“One of the highlights of the season so far has been our fantastic mulberry harvest. We have gathered an impressive 8.8kg of mulberries this week alone. Mulberries have a wonderfully rich, sweet flavour and are such a special crop to grow. Seeing them picked at their peak and sent straight to the kitchen for our chefs to use is a perfect example of our Estate to Plate ethos in action.”

From crisp apples and vibrant vegetables to sweet summer berries, our seasonal harvest is at the heart of every menu.
